Karim’s Entally Revives Old Calcutta’s Mughlai Heritage with New Menu Launch

Karim’s Entally, one of Kolkata’s most loved destinations for authentic Mughlai delicacies, has unveiled its much-awaited heritage menu, bringing back the timeless flavours that once defined the city’s culinary landscape.

The grand launch, held on September 8, was graced by popular actor Darshana Banik, who savoured the Mughlai delicacies and described the biryani as a “beautiful reminder of the city’s food legacy”. Also present at the occasion was Mr. Debashish Kumar, MLA of Rashbehari Constituency and President, South Kolkata District, TMC, who lauded the initiative of restoring the essence of Kolkata’s gastronomic traditions.

Founded in Delhi in 1913 by Chef Haji Karim Uddin, Karim’s has been synonymous with authentic Mughlai cuisine for over a century. The Entally branch, which has been serving Kolkata for the past seven years, is now set to further enrich the city’s food culture with this heritage revival.

Bringing Back Lost Flavours

To ensure authenticity, Karim’s Entally has collaborated with retired bawarchis from Kolkata’s legendary kitchens, who have trained the restaurant’s team in traditional methods of cooking. At the heart of this revival lies the old Calcutta-style biryani, cooked slowly on Dum, where rice, meat, and potatoes blend harmoniously. Unlike today’s spice-heavy versions, this biryani highlights the richness of ghee, the sweetness of milk and cream, and the delicate tang of curd and aloo Bukhara, creating a unique balance of flavours that is light yet deeply aromatic.

The heritage menu features standout dishes such as:

Classic Mutton Biryani – prepared in the traditional Calcutta style

Chitpur-style Mutton Chaap – a dish reminiscent of Kolkata’s food streets

Mutton Kassa – blending Mughlai richness with Bengali culinary soul

“Our cooking is not about excessive spices but about the origin and quality of every ingredient. We focus on authentic integration of flavours that take diners back to the food culture of Calcutta from 40–50 years ago,” said Md Aurangzeb, Co-Franchise Owner & Strategy Partner, Karim’s Entally.

Adding to this, Eqbal Alam, Co-Franchise Owner & Operations Partner, remarked, “Bringing in the old and retired bawarchis to guide our kitchen has been the most fulfilling step in ensuring that we keep the legacy of Mughlai food alive for future generations.”

A New Party Space for Celebrations

Alongside the menu launch, Karim’s Entally also announced the opening of its new party area, located in the same building. The space accommodates up to 120 guests (96 seated), making it perfect for family gatherings, events, and celebrations. Packages start at ₹999 + GST per person, inclusive of venue, décor, service, cutlery, and authentic Mughlai delicacies from Karim’s kitchen. The facility will also extend catering services across the city.

With its new heritage menu and expanded facilities, Karim’s Entally not only preserves the Mughlai culinary legacy of Calcutta but also invites food lovers to create new memories over age-old recipes.
